So if there is something my husband actually likes doing in the kitchen, it’s making ice cream. Considering he spent a good 20 years working in hospitality he’s pretty handy with a blender. Seriously he just get’s in and whizzes these concoctions up and then the kids have something nice for a treat every now and then (when we haven’t eaten most of them ourselves).
His last effort was using a tropical mix, so we’ll just call it Tropical Coconut Ice Cream, it took about 10 mins from start to finish so this is a nice and easy recipe for homemade ice cream.
You will need:
Tropical Mix Fruit fresh or frozen – think Mango, Pineapple, Pawpaw etc
1 400ml can of Coconut Milk
1/4 cup sweetened condensed milk – if you would like something a little sweeter
So technically this recipe is actually a pina colada frozen….so feel free to add some rum into the mix for something yummy just for yourself/friends etc.
Add your tropical fruit mix into a blender and pour over the coconut milk, add in the condensed milk or rum here and blend. Make sure you taste before freezing to make sure you like it!
Then pour into your Ice Pop moulds and place in the freezer for you to enjoy later.
