These Ice Pops are super easy to make and only have a few ingredients. I made them for my family when they had sore throats, and they went down a treat!
– 250ml coconut water
– Dash of sugar free lemondate
– 1-2 lemons
– 2 tablespoons of sugar syrup (optional)
Measure out your coconut water into a jug and add in a dash of the lemondade. Add the juice of one lemon and taste, if you want a more lemony/tangy flavour add more juice until you are happy.
Optional – Sugar Syrup. To make your sugar syrup dissolve two tablespoons of sugar in 50-100ml boiling water and add to recipe.
Place Ice Pops in freezer for 4 hours. The recipe will expand when frozen so it’s best not to fill the Ice Pop moulds right up to the top! When you are ready to serve give them 5 mins out of the freezer and then wiggle the bottom of the moulds to get them up and out.
I made two Ice Pops without sugar syrup and only using 1 lemon. I made the other two with the sugar syrup and 2 lemons. My husband liked the 2 lemon Ice Pops and I preferred the ones with no sugar and the one lemon, so it’s really up to you how you make these.
